Ingredients
3/4 cup quinoa, rinsed
1.5 cups unsweetened almond milk
1 apple, diced
1 tsp cinnamon
1/4 tsp ground nutmeg
2 tbsp chopped pecans
1 tbsp ground flaxseed
Method
Simmer the quinoa in the almond milk with the cinnamon and nutmeg for 15 minutes, stirring occasionally.
Add the diced apple in the last 5 minutes so it softens but keeps some bite.
Stir the flaxseed through off the heat.
Serve topped with the pecans and a splash more milk.
