🍄 Pearl Barley Mushroom Risotto

  1. Warm 1 tbsp oil in a wide pan and fry the mushrooms hard until deeply golden, then set aside.
  2. Add the remaining oil and soften the onion and garlic for 5 minutes.
  3. Stir in the barley and thyme, then add the stock a ladle at a time, stirring, for about 30 minutes until tender.
  4. Return the mushrooms, stir through the parmesan, and season generously with black pepper.
