Ingredients
1 large sweet potato, cubed
1 can black beans, drained
1 tsp ground cumin
1 tsp smoked paprika
2 tbsp olive oil
1 avocado, sliced
2 handfuls baby spinach
Juice of 1 lime
Fresh coriander, to serve
Method
Heat the oven to 200°C / 400°F. Toss the sweet potato with 1 tbsp oil, the cumin and paprika, and roast 25 minutes.
Warm the black beans in a small pan with a splash of water and a pinch of salt.
Divide the spinach between two bowls and pile the hot sweet potato on top so it wilts slightly.
Add the beans and avocado, then dress with the lime juice, remaining oil and coriander.
