Ingredients
1 can cannellini beans, drained
150g mozzarella pearls
2 cups cherry tomatoes, halved
Large handful fresh basil
2 tbsp olive oil
1 tbsp balsamic vinegar
Salt and black pepper
Method
Combine the beans, mozzarella and tomatoes in a bowl.
Dress with the olive oil, balsamic, salt and pepper.
Tear the basil over generously and toss gently.
Tips & swaps
Let it sit 10 minutes if you have time — the tomatoes release juice that becomes the dressing.
Swap mozzarella for avocado to make it dairy-free.
Keeping it
Keeps 2 days, though the basil darkens.
Track what it does for you
Whether a meal helps is personal. PCOS Ai logs what you eat alongside your symptoms and cycle, then shows which foods line up with how you actually feel — from your own data, not a generic list.
General wellness information, not medical or dietetic advice. Nothing here diagnoses, treats or cures PCOS. Nutrition figures are per-serving estimates. Check with your doctor or a registered dietitian before making significant changes — especially if you are pregnant, breastfeeding, diabetic or managing a food allergy.
