Ingredients
1 can chickpeas, drained and rinsed
1 cucumber, diced
1 cup cherry tomatoes, halved
1/4 red onion, finely sliced
1/3 cup feta, crumbled
10 olives, pitted
2 tbsp olive oil
1 tbsp red wine vinegar
Handful fresh parsley, chopped
Method
Tip the chickpeas into a large bowl with the cucumber, tomatoes, onion and olives.
Whisk the olive oil and vinegar with a pinch of salt and pepper, then pour over.
Toss well, then fold through the feta and parsley.
