Ingredients
1 cup cottage cheese
2 eggs
1/2 cup oat flour, or blitzed oats
1 tsp baking powder
1 tsp vanilla extract
1 tsp cinnamon
1 tsp coconut oil, for the pan
3/4 cup berries, to serve
Method
Blend the cottage cheese, eggs, oat flour, baking powder, vanilla and cinnamon until smooth.
Rest the batter 5 minutes — it thickens noticeably.
Melt a little coconut oil in a non-stick pan over medium-low heat and cook small pancakes for 2 minutes a side.
Stack and top with the berries.
