Method

  1. Heat the oven to 200°C / 400°F and line a large baking tray.
  2. Toss the broccoli, onion and tomatoes with 1 tbsp olive oil, the garlic, salt and pepper, then spread out on the tray.
  3. Roast for 12 minutes, then push the vegetables to the edges and nestle the salmon in the middle.
  4. Drizzle the salmon with the remaining oil, top with lemon slices, and roast 12–14 minutes more until it flakes easily.
  5. Finish with the lemon juice and a crack of pepper.
