  1. Whisk the soy sauce, sesame oil and rice vinegar together and toss the salmon through it. Leave 10 minutes.
  2. Divide the cooled rice between two bowls.
  3. Arrange the salmon, edamame, avocado and cucumber on top.
  4. Spoon over any remaining dressing and scatter with sesame seeds.
