Ingredients
3 eggs
60g smoked salmon, torn
1 tbsp cream cheese
1 tsp butter or olive oil
1 tbsp fresh chives, chopped
Black pepper
Method
Beat the eggs with a pinch of pepper.
Melt the butter in a non-stick pan over low heat, then add the eggs and stir slowly and constantly.
When they are still slightly loose, take the pan off the heat and fold through the cream cheese and salmon.
Finish with the chives — the residual heat will set them perfectly.
