Ingredients
1 can tuna, drained
1 large cucumber
2 tbsp Greek yogurt
1 tsp Dijon mustard
1 spring onion, sliced
Juice of 1/2 lemon
Salt and black pepper
Method
Halve the cucumber lengthways and scoop out the seeds with a teaspoon to make two channels.
Mix the tuna with the yogurt, mustard, spring onion, lemon juice, salt and pepper.
Spoon the mixture into the cucumber halves and cut into shorter lengths to serve.
