Ingredients
1 cup red lentils, rinsed
1 onion, diced
2 carrots, diced
2 cloves garlic, crushed
1 tbsp fresh ginger, grated
2 tsp ground turmeric
1 tsp ground cumin
4 cups vegetable stock
1 cup coconut milk
1 tbsp olive oil
Juice of 1 lemon
Method
Warm the oil in a large pot and soften the onion and carrot for 6 minutes.
Add the garlic, ginger, turmeric and cumin and stir for 1 minute until fragrant.
Tip in the lentils and stock, bring to a boil, then simmer covered for 20 minutes until the lentils collapse.
Stir in the coconut milk and blend smooth, or leave it chunky if you prefer.
Finish with the lemon juice — it lifts the whole pot.
