Ingredients
2 large courgettes, spiralised
100g wholewheat spaghetti
3 tbsp basil pesto
1/2 cup cherry tomatoes, halved
2 tbsp pine nuts, toasted
2 tbsp grated parmesan
1 tbsp olive oil
Method
Cook the spaghetti to the packet instructions, reserving a splash of the water.
Meanwhile warm the oil in a pan and toss the courgette noodles for 2 minutes only — any longer and they weep.
Add the drained spaghetti, pesto and a splash of pasta water, and toss to coat.
Fold through the tomatoes, then serve topped with pine nuts and parmesan.
